A Little Chimichurri History

Chimichurri has its roots in Argentina and Uruguay, where it's a staple at the asado—an open-fire barbecue where meats are the star and the sauce is essential. Parsley, garlic, vinegar, and olive oil are the base, with just the right kick of red pepper flakes. It's rustic, unfussy, and always made fresh.

Classic Recipe

Here’s our take on the classic chimichurri, inspired by tradition but brightened by the clean, seasonal flavors we’re known for in Ketchum:

Ingredients:

  • 1 cup finely chopped fresh parsley

  • 2 tablespoons fresh oregano

  • 3 garlic cloves, minced

  • ½ teaspoon red pepper flakes

  • 2 tablespoons red wine vinegar

  • ½ cup extra virgin olive oil

  • Salt and pepper to taste

Mix everything together and let it sit for 15–20 minutes to let the flavors mellow. It’s raw, vibrant, and ready to elevate everything from steak to roasted squash to our house-made flatbread.
